Something else, life-changing.....I finally perfected the precisely perfect recipe just now.......
Pesto Pistachio Sauce (over pasta or as a pizza base)
1 cup of basil leaves
1 cup of spinach leaves
3/4 cup of shelled pistachios
large smashed garlic clove
lemon juice - dash
1/2 cup fresh grated Parmesan cheese
1/3 cup of olive oil
1/3 cup of heavy cream
Toss everything into food processor until finely chopped/blended. That's it. HEAVEN.
Having new neighbors over for dinner in an hour. I am using 3/4 to make a pizza and topping with grilled red peppers and prosciutto. The rest will go over whole grain penne (for me, I am vegetarian.)
