That would be a hilarious ending.

But I honestly think it's not only the dragging out of the story (which definitely occurred, as there was a lot of repetition over the 5 seasons), but they also took so long to get there that they started overthinking everything.

They were clearly affected by the early 2020s wokes scolding them over being homophobic (which they weren't), which is why we are seeing this stupid overcorrection.

I will say that whenever a seemingly undefeatable demogorgon appears on the screen and attacks people, I think, "Didn't we already do this in Season 1?"
