    who was it who ran a pizzeria here? had some complications with tyde at one point... question about cheese

    ive been using a pizza oven for a while now and my grail at this point is a proper commercial real life actual cheese blend, eg what they actually fucking use in nyc slices.

    my sauce game is on fleek, my dough game is on fleek, but i feel like there is huge and deliberate gap in my cheese game.

    im not talking about neapolitan pizza btw, im talking about those ubiquitous nyc slices.

    but you are looking for = wasn't he named the Hut or such? DD def knows who we are referring to as he had major issues with Tyde too after helping him according to him.

    also the infamous “meth in the tub” debacle. Hut had rented a motel room for Jewdonk and later claimed he was charged several hundred dollars worth of damages on his cc after Jewdy damaged the tub while cooking some meth.

    I did visit his pizzeria not too long ago, on the way back from the Bay Area. Pizza was very good, and we talked there for a long time. Good guy. Dough was not soggy at all, btw.

    Thesparten also attempted to run a pizza place, but it seemed to just be an idea he pulled out of his ass, and it failed. Hut has been doing it for a long time.

    Over years lurking this forum you learn these things (lol) and how 'Tyde' (Marty) allegedly was cooking meth in the bathtub and it exploded getting him charged for damages lol anyway, PFA stuff, Tyde is now banned from here pretty sure.

    I need to start up my dough game


    i picked up a breville a few years back and honestly its one of the all time great kitchen investments ive ever made.


    as far as dough goes, if you havent already, head to amazon and pick up a 12 pack or whatever of the caputo blue. i spent a long time trying to wrangle normal flours into something interesting and usually the best case scenario was like 'wow im eating cheese and tomato sauce on a big flat pretzel' more or less and the day i invested in some proper caputo 00, things started to move in the right direction.


    also obviously the sweet spot is the 24 hour or more proof but with caputo 00 and a space heater set to low i can proof my dough in about 2 hours and have something legit delicious. i lose a lot of the fluffy / bubbly character that you get after a proper overnight proof but many a delicious meal has started with me looking at the clock at 4pm and being like 'yeah fuck it' and tossing a bunch of ingredients into my mixer for 10 minutes and then setting it on top of the space heater. trick is to not let it get hot enough to kill the yeast. beyond that its a fucking great meal, every time.
