Part of that may be due to laziness. I'm making large batches. I marinate them in Frank's buffalo sauce for an hour, and cook them in the oven for about an hour at 350F. I've seen other methods online that involve higher heat, less time, and turning them, which I didn't really feel like doing. A lot of people apparently swear by steaming them first. I experimented with breading them in the middle of the week, but that sucked. Maybe a light coat of flour wouldn't hurt. I'd also like to try mixing in a little garlic to the marinade.
