It went on sale and I had never even seen it outside of Food Network TV before. Mario Batali did a thing in Spain where they were eating this insane ham that looked like it was made of cherry candy and went on to explain about how it was made. I mean i've had a ton of prosciutto before, so I just wrote it off as Spanish prosciutto. I was greatly mistaken. This stuff tasted very earthy, like I could taste the farm it was raised on. I don't mean like wild game butt-funk taste, but like you could taste the soil, hay, acorns. It's unique and doesn't taste like anything i've ever tried.
So anyway I didn't know what to do with it, so I put some in an Alfredo the night before and it worked out, then I ate most of it just out of the package with a slice of provolone. I had the asparagus left over from a couple of days before so I just put it all together and called it breakfast.
It was like $4 for like 2oz when I grabbed it, i'm guessing like $6 regular. Good prosciutto runs about $20 a pound around here.

Caution. If you are a fat guy with a newish smoker and head out to you tube to learn about the best process to smoke a brisket be prepared to lose hours of your life.

Is that a Weber Smokey Mountain?
I used mine for about a year before I bought this mod where you set the temperature on it, and there is a fan that goes into the bottom holes than sucks in air to raise the temp and turns off the air when it gets too high, so you can get a nice steay 225 degrees without trying hard. very nice for overnight smokes where you don't have to wake up every 2-3 hours to check on the temp.

Usually just get prime rib (standing rib) in restaurant.
How long and how hard to do this?
Every Sunday we go to the same restaurant and I get 12 oz prime rib. Couple scotches. Same table, usually same waitress. No words are spoken.
It is such a simple pleasure. I am on my way now.
I ordered a 24oz they offer for a special once or twice. I literally had a guy walk by and knock my table with his knuckle and nod his head. He understood.
I think I am gonna take a crack at this though.
