Dragon Poppers

5 Large Jalapeno Peppers
1/4 lb. Ground Beef
1/4 Stick Philly Cream Cheese or some other cheese if you prefer.
Flour
Egg
Breadcrumbs
Salt, Black Pepper, Garlic Powder, Onion Powder.
Chili Sauce



Wash and split your Peppers lengthwise and cut halfway down the Stem end. Remove Seedpods and White Ribs inside Peppers, reserve some Seeds if you want some hotter Peppers.

Brown your Mince and break it up good. Add Salt, Pepper, Garlic and Onion Powder and Chili Sauce to Mince and stir. Drain most of the grease off and set aside. (I threw in some leftover hotdog chili into my mix for this one, if you care.) (Add your reserved Chili seeds to the Mince here if you wish)

Cut off a chunk of Cream cheese and press it into one side of the Pepper until it's half full. Spoon in the Mince into the other side of the Pepper and press it closed and run your finger across the slit to clear any excess out of the Pepper.

Dredge each Pepper through Flour, then Egg and coat with Breadcrumbs. (I dried my own Breadcrumbs and seasoned them with the same stuff as in the mince. Some people like crackers for this, but I like homemade chunky breadcrumbs.)

Pan fry in oil till golden brown. (I use tongs to turn these and spoon the oil over the top of the Peppers while they cook in a shallow pan, you deep-fry if you feel like it.)

Drain on some paper towel and serve HOT.

Served with Salsa and RANCH, BITCH!
