Low fat chicken splithita salad
One can of drained rotel (I use Aldis cheaper version) for each large boneless skinless chicken breast. You can use a slow cooker all day, I use a pressure cooker for 25 mins.
When chicken rotel mixture is cooked, use a fork to break apart chicken. Chop lettuce, onions, tomatoes. Heat fat free refried beans in microwave.
Bottom layer of plate place salad(you can put tortilla chips first if you want), then refried beans, Salsa, chicken mix, onions, tomatoes, jalapeno peppers, then fat free sour cream. Yum!
