This thread has got me thinking about homemade pizza.
One day I dream of having a brick oven in my home. Until then, is there any decent way of making pizza at home? I've heard of people using ceramic tiles in the oven.
I should have taken pictures.....just got done sending out 12 pizzas for Gary Sinise and his roadies in the Lieutenant Dan Band. They are setting up today for a USO Concert tomorrow at the Air Force Base near my restaurant.
Made a special one for Gary......Spicy Thai Peanut Sauce, Bean Sprouts, Carrots, Cilantro, Green Onions and sauteed Shrimp....and of course freshly shredded Mozzarella.
I bought a pizza oven recently. My crust game is on fleek but when you get into the cheese and sauce, things get deeeeeeep.

Pizza stones are great and all but if you cant get ambient temperature into the 700+ range, youre dead out the gate.

pizza stone or quarry tiles on 550/max for a while, then broil them on high when your oven can get no hotter
pizzamaking.com has some good forums for each specific type of pizza you want to make.
I was into making quasi-NY style pizzas in my oven for a while - best crust for me was achieved with low levels of yeast risen over multiple days in a fridge.
