I actually wondered this myself, as I was thinking of taking Benjamin to Caesar's in November (he loves that hotel), but knew he would be disappointed because it will probably be too cold to swim.

No. I've been lucky to go to vegas 11 times and 7-8 of them with my now wife. All the times we went out it was during the winter in New England and every time she asked me to try and find someplace with an indoor pool.
Technically it is not on the strip but the Platinum Hotel does have an indoor pool. I have stayed there for business and I enjoyed it very much. However there is no casino attached to the hotel. But it is off of Koval and Flamingo which is walking distance to the strip.
+1 for the platinum being the only one I know of....the only other possibility that comes to mind is the best western on Joe brown by the LVH but that's not the strip either but "fairly" close
Being on Koval though gives you the chance to pay your respects to Tupac
Edit.....embassy suites convention center looks to be the closest to the strip with an indoor pool other than the platinum
