Sometimes initially they mutate to a deadlier version, but once they start mutating to being milder, they just about never return back the other way. That's why Spanish Flu quickly became equivalent to the seasonal flu once it mutated to be less deadly, and the pandemic ended. Note that even COVID mutated to a slightly more deadly version (Delta), before giving way to Omicron about 5-6 months later, which was substantially less dangerous.

Also, most of the Spanish Flu deaths were due to secondary bacterial pneumonia, since there were no antibiotics yet. Had the Spanish Flu shown up 15 years later than it did, it would have been far less deadly.

Bottom line is that it is highly unlikely that COVID will mutate back to a version like original or Delta. It will either keep its existing deadliness (really only a threat to old people) or possibly turn even milder, perhaps eventually becoming a cold.
