    Put the steak in a large ziplock, add some of that powder (half a pack) add the canola oil and white vinegar and some water and let the steak sit for a bit in that bag (maybe an hour or more). Read the directions.


    If you can't afford to buy a quality cut, eat a fucking hamburger. Salt and pepper then cooked no more than medium and rested. I seriously want to slap the fuck out of every person I ever hear order a steak well done and then inevitably drown it with A1 or some other shit.

    i haven't been in this thread in awhile, but OSA's salmon got me back on board. i have plenty of pix of food I've cooked and will get back into the game.


    anyway, salmon with glaze, rice and asparagus.

    Pulled chicken, guac, sauteed asparagus and brussel sprouts

    Pulled chicken recipe as follows\

    Crockpot on high

    1 cup of sweet baby rays
    2 cups of cattlemans gold sauce
    1 tbs of olive oil, 1 worcestershire sauce, 1 soy sauce, 1 garlic

    mix all that stuff, add 5 lbs of think chicken breasts come back 3.5 hours later and mash it all apart/thread

    Pulled Pork Quesadillas

    Rub:
    Salt, Cracked Black Pepper, Garlic Powder, Onion Powder, Cumin, Sage, Smoked Paprika.

    Fridge for an hour. Seared shut in a pan with a little olive oil in it. Into the slow cooker for 6 hours.

    These have sauteed onion and Monterrey Jack in them.

    homemade chimichanga stuffed with barbecued pulled pork & black beans

    I was just checking out the sous-vide thingy Joe made that with. Pretty smart company. First you use the sous vide thing which goes for $200, then you use their "searing kit" which is a blowtorch pretty much at $160.

    anyone here mess with sous vide at all? I think sonatine has, but any others?
