    Oh this? Just the top-secret recipe for KFC, no big deal.

    11 spices — Mix with 2 cups white fl

    Prep: 30 minutes
    Soak: 20-30 minutes
    Cook: 15-18 minutes
    Makes: 4 servings

    2/3 Ts salt
    1/2 Ts thyme
    1/2 Ts basil
    1/3 Ts oregano
    1 Ts celery salt
    1 Ts black pepper
    1 Ts dried mustard
    4 Ts paprika
    2 Ts garlic salt
    1 Ts ground ginger
    3 Ts white pepper

    1 cup buttermilk
    1 egg, beaten
    1 chicken, cut up, the breast pieces cut in half for more even frying
    Expeller-pressed canola oil

    1 Mix the flour in a bowl with all the herbs and spices; set aside.
    2 Mix the buttermilk and egg together in a separate bowl until combined. Soak the chicken in the buttermilk mixture at room temperature, 20-30 minutes.
    3 Remove chicken from the buttermilk, allowing excess to drip off. Dip the chicken pieces in the herb-spice-flour mixture to coat all sides, shaking off excess. Allow to sit on a rack over a baking sheet, 20 minutes.
    4 Meanwhile, heat about 3 inches of the oil in a large Dutch oven (or similar heavy pot with high sides) over medium-high heat to 350 degrees. (Use a deep-frying thermometer to check the temperature.) When temperature is reached, lower the heat to medium to maintain it at 350. Fry 3 or 4 pieces at a time, being careful not to crowd the pot. Fry until medium golden brown, turning once, 15-18 minutes. Transfer chicken pieces to a baking sheet covered with paper towels. Allow the oil to return to temperature before adding more chicken. Repeat with remaining chicken

    Not sure why tine didn't post the whole thing, but here you go, time, temp, and the egg and buttermilk part that was left out above.

    In any case, where did you get this from? Did someone literally leak this or is this just a supposed copycat recipe?

    Just a quick trip report as I tried this last night.

    I followed this recipe to a "T" & it's not the secret recipe IMO. It made some pretty tasty chicken but the cooking time or temp are off IMO as it seemed to be overcooked if you follow the 15-18 minute instructions & undercooked if you cook it to the golden brown color, 10-12 minutes, that we are all accustomed to. The taste was also slightly off but was still pretty tasty & juicy even though it looked overcooked by the color.

    I also did some in the oven like shake-&-bake(25 minutes @ 350 turning halfway) & it turned out closer to the original KFC than the fried stuff in terms of color but the taste was still a little off but still good. I'd do this again.

    1 note for anybody else that gonna try this would be to cut the recipe in at least half. I did 14 pieces & had enough coating to do at least 3-4 times that much.

    Sorry, I forgot to take pictures.

    I was reading an article about people doing the same thing as you, with similar results. One thing people seem to agree on, other than the cooking time/temp and chicken color being impossible to reconcile, is that KFC is said to use lots of MSG in everything, chicken obv included. If there's no MSG, it ain't KFC.

    As 4Dragons mentioned, KFC's real secret is an industrial pressure fryer.
    Yeah, I get that but according to the story posted earlier the Tribune insinuated they replicated KFC to the point where they couldn't tell the difference using these exact instructions. My experience was different hence the reason for my post. The fryer would certainly make a difference but I still think the taste is a little off.

    "As bad as fried chicken can get", may be accurate but as a kid, the occasionall bucket of KFC for dinner was god. Of course we had no thought of ingrediants, fat content etc. and that is the way you should approach such a meal. The reason I don't eat there now has nothing to do with taste. I've never seen anyone spit up a bite of KFC because of taste issues and the "your fried chicken beats my fried chicken" is a bit silly.
