Brandon is correct. Poached eggs are the way to go.
I've only eaten my eggs scrambled, but when in New Orleans a few years ago my wife and I ordered what was the restaurant's specialty. The restaurant is called "Stanley" and is on Jackson Square in the French Quarter. The offer 2 variations of the classic Eggs Benedict. Eggs Stanley is 6 cornmeal-crusted oysters, poached eggs, Canadian bacon and Creole hollandaise on a toasted English muffin. Eggs Stella is basically the same dish with 2 soft shell crabs in place of the oysters. If you're ever in New Orleans give these dishes a try.
The biggest problem with poached eggs is that most restaurants only offer them as part of their eggs Benedict selection. If the egg isn't poached properly, if the English muffin is under toasted, if they use cheap bacon, or especially if the hollandaise sauce is from a jar, then the dish is disgusting and the thought of eating another poached egg will turn you off.
