Don't mean to call you out here mike, but I've got a life outside of message boards. I'm not ignoring you bro, but you also kinda weird me out here recently with your lunch meat stories. I'm emailing the Pepper guy today to talk pepper talk to him and see what he knows.

The lunch meat stories are intended to make people laugh and nothing else, nothing I say should legitimately weird anyone out.

The Pepper guy has never met me nor spoken to me, I am not even sure he knows who I am aside from being the guy who gave a friend of his mind blowingly hot chili pepper. I went out of my way to hook the two of you up in the hopes of something extraordinary perhaps, but more than likely nothing. I just wanted to know for sure if you were or were not planning to talk to the man as he's pretty excited (peppers being his life, so I am told)

Honestly, the fuck is wrong with you...

Been so busy, didn't have a chance to post this.

Made an amazing pot of chili from the bag of peppers Faduniak sent me. The heat from the chilies was just right... rolled softly but powerfully to the back of the tongue, and made a sip of ice cold beer sheer.... heaven. Had it with an oatmeal stout. Perfection. Was fun cooking too. Everyone who tasted it asked for the recipe, so I think I done good. Here it is in all it's Faduniak-driven glory:

Vwl's Famous Fall Chili

Gathering the Ingredients
2 tablespoons olive oil
1 onion, chopped
5 cloves garlic, minced
3 lbs beef, cubed (non-kosher folks can sub this in part with pork - the better the quality meat, the better the chili)
1 lb lean ground beef
2 cans diced, fire roasted tomatoes
4 cans beans – rinsed (pinto, black, white – it doesn’t matter – use a combo!)
1 can tomato paste (12 oz)
1 bottle dark beer (try an oatmeal stout – one for the pot, and one for the cook!)
3/4 cup fresh brewed espresso
3 tablespoons dark brown sugar
3 ½ tablespoons chili sauce
1 tablespoon cumin
1 teaspoon finely ground oregano
1 teaspoon cayenne
1 teaspoon coriander
1 teaspoon white pepper
1 teaspoon chipotle powder
1 teaspoon salt
1 tablespoon unsweetened cocoa powder
1 Serrano chili, chopped (leave seeds in)
2 Fatalis chili peppers, chopped (leave seeds in) (use jalapeno if you can’t get your hands on the specialty chili peppers like Fatalis)
1 Red Savina, chopped (leave seeds in) (use habanero if you can’t get your hands on the specialty chili peppers like Red Savina),
Salt and freshly ground pepper
A couple spoonfuls of masa harina if needed
Fresh cilantro, avocado, chopped onion, green pepper, and finely chopped chili peppers for garnish

Making the Magic Happen
Sauté the garlic, onion and cubed meat till browned– season with salt and pepper. Add half the beer and cook off a portion of the liquid over medium heat. Add everything to a large stew-pot – include the liquid.

Sauté the ground beef - season lightly with salt and pepper, drain, and add to the pot.

Add tomatoes, the salt, the rest of the beer, and the fresh espresso to the pot. Stir well and bring to a simmer.

Toast the dry spices in a dry pan over a low heat until the aroma fills the kitchen. (Be careful – you’ll need ventilation. The fumes from the toasting spices can make you cough and choke if you don’t have adequate ventilation.) Add the toasted spices to the pot.

Add the tomato paste and sugar to the pot. Stir and simmer covered on low for an hour.

Add the beans, the chopped chili peppers and the unsweetened cocoa. Continue to simmer until the beef (or pork) cubes are completely tender.

Taste. The chili should generate a lovely enjoyable heat that travels to the back of your tongue and makes taking a sip of an ice cold beer amazing. If it’s not spicy enough for you at this point, chop up another Red Savina (or Habanero), and add to the pot. Sometimes at this point I split the chili into two pots, and add an extra Habanero to one of them. This way I’ve got chili for everyone, as not all can handle the hot stuff.

Fixes
Chili came out too thick? Add more beer or low-sodium beef broth. Too watery or greasy? (High fat meats can cause this.) A couple of spoonfuls of masa harina flour added toward the end of the cooking time will smooth out the grease, thicken, and add a distinctive flavor.

Serving
Serve with fresh cilantro, chopped onions and chopped chilies as a garnish if you need more heat. A mix of finely chopped onions and green pepper adds freshness and crunch for those who can’t handle any more heat.

I forgot how hot this shit was and added 1/4 tsp to my chili and it put my BIL in hospital with peritonitis after it ate through his gut. Oops.

Carolina reapers are no joke.

I’ve eaten every kind of hot pepper possible. Ghost, reaper, one chip challenge, etc… I love them but they really fuck up my stomach do I stopped eating them.

The worst thing that happened, eating a ghost pepper on an empty stomach I threw up and it came out my nose…. Worst burning pain I’ve ever had

These still fucking hit, although I wouldn't dare go for a whole pepper anymore. Palette can no longer handle the same level of heat. I once took a piss after thoroughly washing my hands after eating and felt fire in my urethra for more than a day.

Grab a jar of dalle paste from an Indian store if you can handle fire.
