It's laughable that you think that unions no longer serve a purpose. Sure - you may be an ethical business owner who wishes to pay his employees a fair wage. Unfortunately, this is not the case everywhere else. Due to the class struggle, which is inherent in a capitalistic society, workers always get fucked. A big business, whether it be a factory or McDonalds, always wants to increase profits and thereby reduce wages, which are a large expense. Workers on the contrary always want to raise wages. These people who have only their bodies as the only thing they can sell (their labour) need unions to protect them, or the businesses win. Without unions, business ALWAYS wins and the worker ALWAYS loses. You might have a problem with being told how to manage YOUR business, but without unions and the protection it gives to the working class, wages would become a race to the bottom.
It is best summed up in Das Kapital by this quote: "The value of labour-power constitutes the conscious and explicit foundation of the trade unions, whose importance for the […] working class can scarcely be overestimated. The trade unions aim at nothing less than to prevent the reduction of wages below the level that is traditionally maintained in the various branches of industry. That is to say, they wish to prevent the price of labour-power from falling below its value."
I recommend you read Das Kapital to get a better idea about this (At least Vol I, which pertains more towards this).
Let me repeat - You may not like being told how your business needs to treat its workers, but without the power of trade unions, you and every other company would be allowed to pay less and less and there would be nothing workers could do about it.

The problem with the case of an alcoholic worker in Gallo's situation is that the union has no incentive to address the situation if the *company* pays for his treatment. Instead, if the union paid for his treatment, the union members (who are paying the dues to cover such treatment) would be incentized to help him get the treatment or drop him from the union for failing to do so.
