So, for some odd reason, tonight as late as it was, i all of the sudden wanted meatloaf. I don't know why...i guess maybe i just was craving some" home cooked comfort food" like my mom would make, if you know what i mean. Ive never even made it myself before, so here is my first try.

pros:
plenty of peppers with the rice (i love red/yellow/orange bell peppers)
eggroll was much better than i thought it would be. seems to be a food that can easily be frozen and microwaved. a ton of cheap chinese restaurants probably use these type of frozen egg rolls
cons:
only finished half of the beef & rice. rice was kinda mushy. certainly wasn't great, but not the worst thing i've ever eaten. very meh

i just remembered this since the thread was just bumped. Those "before" pics look absolutely TERRIBLE imo; I am ashamed. Im not even sure what I did with the "after" pics... I know i took a couple but who cares...they were nothing to brag about anyway. Oh well, doesn't matter. The meatloaf - especially for my first crack at it - tasted "ok" , but it's certainly not my finest work.
I guess I just had one of those days where I was craving a home-cooked specialty like my mom would make... it's too bad she isn't around anymore to give me a good meatloaf recipe!

One of my friends who lives in the Chicago area brought me up a package of this. Im cooking some Italian beef sandwiches up as we speak...i will post updates with dipped sandwiches that will truly be "super moist".
