Not sure if you want to go this route, but you can threaten to go to the police on him if he doesn't pay you, as well as publish his name all over the net.
If he seems like a scary guy or seems tied to organized crime, this isn't a good idea, but if it's just some random degen taking bets, you might want to consider that route.
BTW, I also got fucked last year by a bookie playing on a short bankroll.
This guy was based out of Vegas. Just some random degen loosely connected to poker (but not anyone associated with this site or my radio show).
If you remember, I went on a hot run in MLB, mostly betting dogs, during the first half of the summer. Unfortunately, that largely contributed to busting him (even though I wasn't betting big money), and he stiffed me for $2340. He stalled for awhile with a fake "vacation", then stopped answering me, and then said he was flat broke, which I actually believe he was. I think he was freerolling me during the "vacation", hoping I would lose back what I was up, but that didn't happen.
I put a lot of pressure on him, and he reluctantly agreed to make payments. He was first making them regularly, but then started missing some, and then vanished altogether. Strangely enough I got all but $580 from him, so I'm not sure why he bothered paying me at all if he was just going to ultimately stiff me at the end. I hear he's playing low limit poker in Vegas now.
I might blow him up soon. Stay tuned.
