It all depends on the type of pizza you want to make. If you want to produce high end traditional Neopolitan pies you absolutely need a wood fired oven. Pan pizza is too thick too cook above 600 degrees. The conveyor ovens have a series of fingers that direct air flow differently in different parts of the oven, they work quite well. Places that bill themselves as high end gourmet pizzerias probably aren't using a conveyor but their audience is vastly different From mine. Pizza consumers are segmented, there are the bargain shoppers they know Little caesars sucks but it's $5. I could have ALL THEIR BUSINESS if I sold pizza for $4.75. There is a LC in my center I ignore their customers. Then you have those that think Pizza Hut, Dominos, Papa Johns make a good pizza. This group is made up still mostly of bargain shoppers but they are willing to pay a bit more for a little more quality. The next group is where I would place my place. We offer superior quality versus the chains and we attract customers who are willing to drop $20 on a pie without blinking. I make a good quality pizza with excellent ingredients. Do I make the best pizza anywhere? Hell no id be a fool to think my pizza ranks with Lou Malnatis or Pizza Beddia in Philly. But I'd be a bigger fool if I tried to sell their pizza in my market. Lompoc is a hard working blue collar town. I offer the best pizza in the market I target. It's akin to Druff who's made a good living as a poker pro. Is he the best limit player in the world? I think even he would say no, but he's good enough to win consistently.

please note that for all the shit i talk about 'what i would change' about your pizza, i fully and openly admit to knowing fuckall about whether or not you could even afford to make those sorts of changes, because as much as i love crusading for peak pizza science, i love money a lot more.
