    Getting late here but I was just able to finish prepping the ribs for tomorrow. I just recently bought a smoker and have been trying to use it as much as I can.
    Tomorrow I'll be cooking 3 slabs of pork ribs with a basic Kansas City rub.




    I cut myself when I was trimming the ribs and may be infected with pig aids.






    Gonna be smoking with Hickory and I will be using the 3-2-1 method.


    -Three hours in the smoker @ 230

    -Remove ribs and wrap in tinfoil with 1/2 cup of Apple juice. Place back in smoker for two hours @ 230

    -Remove ribs from tinfoil. Place ribs back in smoker for 30 mins-1hr @ 220

    Final perfection of Mixology Experiment #22: Basil Habanero Rumtini

    This is my favorite cocktail right now... and it's not even close.

    I got the idea from Bread Fruit (a small rum bar and restaurant in downtown Phoenix), but I have made it my own.

    The recipe calls for fresh basil, lime and Habanero with Wray and Nephew Overproof rum and Lillet Blanc. However, at $21 a bottle, you don't really need to use the Wray and Nephew Overproof (although it's really special and aromatic). The reason is, once you have added the bold flavor of the basil and Habanero, the precise flavor of the rum becomes less important. Don't get me wrong, you still need a quality rum. I have found that Calidao Original white Jamaican rum ($8.99 a bottle) is perfect.

    Thoroughly muddle a full handful of fresh basil leaves in your shaker. Add 3 ounces Calidao, 2 ounces plain margarita mix, 1 ounce Lillet Blanc, 3/4 ounce simple syrup, and the juice of a whole key lime. Cut two slices of Habanero into quarters and toss in as well. Add crushed or chipped ice and shake vigorously till ice crystals form on the outside of the shaker. Pour through a strainer into a chilled martini glass.

    If you can't handle a lot of spice, cut the Habanero portion in half. enjoy!

    That certainly looks like a delicious cocktail.

    Looking at the drink picture and then noticing your name and avatar it struck me that I've heard of you before.

    Thai Chicken Quinoa Bowl

    ingredients:
    1/2 cup uncooked quinoa, rinsed
    1 chicken breast, cooked and shredded
    1/3 cup chopped carrots
    1/3 cup shelled edamame
    1/3 cup chopped green onions
    1/4 cup chopped peanuts
    1/4 cup freshly chopped cilantro

    sauce
    2 tablespoons sweet chili sauce
    1 tablespoon rice vinegar
    1 tablespoon canned coconut milk
    1/2 tablespoon brown sugar
    1 teaspoon creamy peanut butter (it mixes in easier if it's melted, FYI)
    1 garlic clove
    1/2 lime, juice
    1/8 teaspoon ground ginger

    directions:
    Prepare quinoa according to directions, which will most likely call for 1 cup of liquid. I prefer to use low-sodium chicken or vegetable stock, so if you have that, use it!

    While quinoa is cooking, combine all of the sauce ingredients together in a bowl and whisk well to combine. Once quinoa has absorbed all of the liquid, stir in the sauce and toss well to coat. Add in chicken, carrots, edamame and green onions, stirring to combine. Taste and season with a little salt and pepper if needed. Toss in half of the peanuts and cilantro, then serve in a large bowl, topped with remaining peanuts and cilantro.

    Is it worth to buy the more expensive Japanese green tea? Or is the cheaper Chinese green tea just as good?
