Can anyone suggest a good piece of software for capturing/saving streaming video? Free is best obv if it really works, but I am willing to pay a reasonable amount for good reliable software.

It depends on what you are trying to record. If it's to grab a youtube video then their are ways to just grab it off their site that you don't need to have it playing to record it.
For something like recording presentations and stuff like that Camtasia is a popular program but it's pricey. That is what a lot of the poker instructors use to record their training videos. That program will record any part of your screen that you want it to whether it's part or full so if you were streaming a video on the web I suppose it would work but I'd expect some choppiness.
You could also try this program which I have used a bit in the past and see if it works for you:

I recommend 1AVCapture: Easy to use, practical, you select the area of the screen where the video will play set5 the frame-rate and then play the movie and start recording. 1AVCapture also records and broadcasts audio alone so that is a plus. 1AVCapture is paid but it is cheap. For free you have CamStudio and Debut Video Capture
May I ask what types of streams you are trying to capture? Live broadcasts, streaming audio files, etc?
